There are so many sweeteners out there, I dont know which to use. Xylitol is 100g of carbs per 100g of Xylitol, yet it gets used in low carb recipes a lot. I dont quite understand that.
Can anyone explain this to me?

Xylitol is a form of sweetener made from sugar that our bodies cannot absorb. Basically, you won't get any calories from it, and your food will still taste great. The big problem here is that since your body doesn't absorb it, it will go right through you, and eating large amounts of this (by large amounts, about three sugar-free chocolates will do it), You will be having bathroom problems like there's no tomorrow.
