To eat or not to eat: Vegetables and their carbohydrate contents

Although most low carb diets encourage the intake of vegetables, it is still difficult to find out which veggies are categorized as low in carbohydrate content. Basically, the amount of carbohydrates depends on the serving size of the vegetable.


Topping the list of low carb veggies is bean and alfalfa sprouts. Also categorized as low in carbohydrate are green vegetables like lettuce and spinach, herbs, bok choy, celery, radishes, sea veggies like nori, cabbage, mushrooms, jicama, and cucumber.


High carbohydrate vegetables are the ones which you need to avoid. This includes beets, carrots, corn, parsnips, peas, plantains, potatoes, and squashes.


However, if you don’t eat the vegetables that are high in carbohydrate content, you may end up having nutrient deficits. In order to avoid that and still keep to your diet, you need to take multivitamins and mineral supplements. This way, you are able to lose weight and still maintain a healthy diet.
