Enjoy Low Carb Chocolate Mousse

On those hot days of spring and summer, you often wonder what you can eat that is both cool and refreshing. Well low carb chocolate mousse is the best way to go. It is very easy to make and it is the perfect thing to eat on those hot days. What you will need is unsweetened chocolate (crumbled up), cocoa powder, eggs, xylitol, sugar substitute, brandy or rum, vanilla, heavy cream, espresso powder, and salt. In a large bowl, you need to mix up the eggs, xylitol, water, chocolate, espresso powder, and cocoa powder. Whisk in the heavy cream and a couple of drops of the sweetener and vanilla. It make take a few times of tasting to actually get the taste right, but I am sure that no one will have a problem with that. After you have whisked the ingredients well, place the mixture in individual cups or bowls and refrigerate for one hour.
