Fried Fish Soup - Ukha

A Low Carb Recipe

Ingredients:

3 lb. cod fillet, cut into large pieces
1.5 liters vegetable broth
2 onions
0.5 carrot
3 potatoes
10 peppercorns, whole
1 stalk celery (with leaves)
1 leek
1 sprig parsley, root and greens
2 T dill, chopped
2 t salt
1/4 t saffron powder
1 lemon, cut into wedges


Instructions:

In large saucepan, bring broth to a boil. Add salt, peppercorns, potatoes, carrot and parsley. Boil for 5 minutes. Add onions and leeks, boil foranother 3 minutes. Strain, then return the broth to the pan

In this broth,boil the heads, fins, tails, and bones for 20-30 minutes. Strain;add the fish cut into large pieces, boil for 5 minutes. Remove the fishfrom the pot, fry in olive oil or butter for 2 minutes then return to thepan and boil for 3-5 minutes.
